Picture this, you’re home watching your favorite show and all of a sudden you get hungry. You go to the kitchen and check the pantry, only to find a bunch of random canned goods. You think to yourself “What can I make with this?”
Have you guys ever been there? I know I can’t be the only person who’s experienced this before.
Soup has always been one of those dishes that I’ve absolutely loved. I can remember being a child and my mom would make the most delicious homemade chicken noodle soup. There was just something about it that just nourished my soul. There’s so many ingredients you can use to make soup. You can make it creamy, thick, loose, and even sweet. The possibilities are endless.
This vegetable soup recipe is delicious and made with inexpensive ingredients. This simple recipe can be made with any combination of fresh, frozen, or canned vegetables. You can use whatever you have in your pantry(or freezer), hints the name Pantry Vegetable soup.
If you don’t have some of the ingredients, feel free to sub them for something else.
Equipment you will need:
1 large pot
A cutting board
A knife
A stirring spoon
A Strainer
Ingredients:
1 can of Black eyed peas
1 can of Lima beans
1 can of Fire roasted tomatoes
1 ear of corn
2 cloves of garlic (minced)
1 medium yellow onion (diced)
1/2 a large green bell pepper (diced)
1 quart of veggie broth
2 dashes of hot sauce
1 Tbsp of ground cumin
1 oz of oil
Steps:
Heat your oil in a large pot.
Add your bell peppers and onions and sauté them until they are translucent.
Add in your minced garlic and stir until brown.
Add your can of roasted tomatoes and stir for 3-4 minute.
Add in your remaining vegetables and stir for 5 minutes.
Once mixed well, pour in your vegetable broth and your seasonings. Let simmer for 25 minutes.
At the last minute add in a few dashes of hot sauce and stir.
Serve with bread or crackers
